Greek Gyros

Delicious and colorful Greek dish. Cook it - you won't regret it! I love Greek cuisine dearly, I just adore zadziki sauce and often cook it for various dishes. Greek gyros is not easy to prepare - you need to bake pitas in advance (of course, you can buy a ready-made version in the store), marinate the meat. But the result is worth the effort! Meat, delicious pita and fresh sauce are so fragrant. It is especially good to cook this dish before going out into nature, and to collect pita directly on the spot. In general, I advise you to try.

Prepare a mixture of spices:

1. Grind cumin and coriander in a mortar.
2. Add the rest of the spices to them.
3. Pour in the olive oil.
4. Mix everything well and let it stand for a while.

The meat needs to be pickled:

1. Cut the pork into large pieces.
2. Pour the previously prepared spice mixture into the meat, stir with your hands for a couple of minutes, as if rubbing spices into pieces of meat.
3. Cover the bowl with a film and put it to marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare pita. We will do it like this:

1. Sift the flour.
2. Add salt and yeast to the flour, mix.
3. Mix water and olive oil, pour into flour.
4. Knead the dough. Knead it for 10 minutes.
5. Put the dough in a bowl, cover with a towel and let stand at room temperature for 2 hours.
6. Divide the dough into 12 equal parts.
7. Roll each into a thin cake.
8. Preheat the frying pan. Fry each pita in a dry pan for half a minute on one side, flip and fry for a minute, flip again and fry the pita for 30 seconds.

Zajiki sauce can be prepared immediately before serving or in advance. The sauce is perfectly stored in the refrigerator for a couple of days. The procedure for preparing zajiki is as follows:

1. Take a medium-sized cucumber. It is better that he was young. Cut it into small cubes, add a little salt and leave for 10-15 minutes until it gives juice.
2. Put the yogurt in a bowl.
3. In the same bowl, add olive oil, salt and pepper to taste.
4. Squeeze out the garlic and put it in the same place.
5. Drain the juice from the cucumbers, squeeze through a sieve.
6. Put the chopped squeezed cucumber in a bowl with yogurt, mix everything thoroughly.
7. Put the finished sauce in the refrigerator.

It's the turn of the filling:

1. Heat a frying pan with olive oil.
2. Peel the onion, cut into half rings.
3. Fry the chopped onion in oil until lightly golden.
4. Put the meat and fry it until tender (10-15 minutes). The main thing is that the meat remains juicy.
5. Wash tomatoes, remove their stems, cut into circles, and then each circle in half.

Finally, when everything is ready, you can proceed to the assembly. Bend the pita in half, put the filling in the middle - fried meat and tomatoes, pour zadziki sauce.
