1. Put the minced meat in a bowl, pour soy sauce and sesame oil, add a little salt, pepper and garlic powder, mix thoroughly.

2. My eggplant, cut into circles, put in a bowl, salt and leave for 10 minutes.

3. Break an egg into a bowl and pour a little water, whisk with a fork. Pour the flour on a flat dish.

4. We spread the minced eggplant on one circle, cover it with a second circle, press it lightly with our fingers. We dip the "sandwich" in egg batter, then breaded it in flour.

5. Fry the eggplants in vegetable oil for 5 minutes on each side, then spread them on a paper towel to remove excess oil.

Serve on the table garnished with fresh parsley.
