1. To begin with, we will prepare fragrant oil with herbs. With it, the fish will have a new rich taste. Shallots, fresh rosemary and thyme are washed, chopped finely. Peel the onion, chop it with a knife.

2. We put the prepared ingredients in the blender bowl, we also put the lemon zest here. Salt to taste, add flakes of red pepper or its ground version. And now turn on the blender and grind everything until smooth.

3. Butter should be softened. It is best to put it out of the refrigerator a couple of hours before cooking. It is not recommended to use a microwave oven, since it is almost impossible to bring the oil to the desired consistency in it. So, we put the softened butter in a bowl. Here we also spread the fragrant mixture from the blender bowl. Mix thoroughly.

4. With the help of a food film, we form sausages from fragrant oil, fix them at the edges. We send the parcels to the refrigerator until the oil is completely solidified. Such oil can be prepared in advance and for the future. It is perfectly stored in the freezer. And when you need it, you can get the oil at any time and use it for cooking different dishes.

5. Fish steaks are washed, carefully dried with paper towels. Then rub each piece with olive oil, salt and pepper. Place on the grill and fry over hot coals for 3-4 minutes on each side. If you cook in a city apartment, then you can use a grill pan, it will turn out no worse.

6. We put the hot steaks on a dish, place a part of the fragrant butter sausage on each piece. The oil will melt on the hot fish, the room is filled with aromas! We serve fish on the table with vegetables and herbs. Sprinkle with chopped green onions.
