1. My meat is passed through a meat grinder (we take a small grate). Peel the onion, chop it as small as possible (it is best to grind it with a blender or grate it). In a deep bowl, combine the minced meat with onions, add garlic passed through a press, as well as finely chopped parsley. Mix everything thoroughly with the addition of salt and pepper. From the resulting mass we form small flat patties.

2. In a deep bowl, pour kefir and pour soda, leave for a minute or two to allow the reaction to pass. Then we break the egg into kefir, add salt and sugar, mix the mass with a whisk, then sift the flour into it. It is very convenient to knead the dough with a mixer, but you can also use a whisk, it will just take longer. The consistency of the dough is like pancakes, even a little thicker.

3. We send the frying pan to the fire, pour vegetable oil. Using a tablespoon, we put small pancakes on a heated frying pan, place a cutlet in the center of each, cover with a small amount of dough. Fry on low heat for 5 minutes on each side (if you make the fire more, the dough will burn, and the minced meat will remain half-baked).

Serve the belyashi hot, garnished with a sprig of greenery.
