After all, in many baking recipes, it is recommended to add dried cherries, it is very tasty in Easter cakes, cottage cheese pastries, etc. Let's start cooking it.

Wash fresh cherries, sort them out and extract the seeds from them in a convenient way for you. It turned out cherries without a stone of 2600 grams. In order for the cherry to dry well, it needs to be rid of the juice, so we fill the cherry with sugar at the rate of 1 kg of pitted cherries 400 grams of sugar. I pour 2,600 grams of cherries with 1,050 grams of sugar and let the cherry juice. I leave the cherry to let the juice flow for 5 hours, stirring every half hour. After 5 hours, the sugar has completely dissolved and we drain the juice from the cherries. To do this, take a saucepan and a colander, drain the cherries into a colander and the juice merges into the pan. Leave the cherries in a colander for 3 hours to drain all the juice, stirring every half hour.

After the cherry juice stack, I got 1800 grams of cherries and 1.5 liters of cherry juice. I am preparing syrup based on 300 grams of sugar and 350 ml of water per 1 kg of cherries, which means that I will need 540 grams of sugar and 630 ml of water for 1800 grams of sugar. I cook syrup from sugar and water, put cherry berries in boiling syrup and let them boil for 5-7 minutes. I leave the cherries to cool in the syrup to 50 degrees and again I throw the cherries into a colander, let the syrup drain completely. After the syrup completely drained, I learned 950 ml of cherry syrup and 1700 grams of cherry berries. From cherry juice and cherry syrup, you can cook a delicious and fragrant compote or just drink.

Now the cherry needs to be dried. You can dry it on the balcony, you can use an electric dryer, I will dry it in the oven. Cover the baking sheet with baking paper, spread the cherries in one layer and send them to a preheated oven to 45-50 degrees for 3 hours. Collect the finished cherries in a paper bag and store in the refrigerator.
