The preparation of the dish is divided into several stages.
Cream: dilute the yolks, starch, vanilla and sugar in milk and cook over low heat, constantly stir the consistency until ready (the cream will become thick and start bubbling), add orange juice and dissolve it completely in the cream, without removing it from the heat.
Filling: Boil the syrup from sugar and water, add lemon peel and quince slices and send it to cook until soft, then select the quince slices from the syrup, and remove the lemon.
Dough: grate the butter and mix with the sifted flour, then add sugar, egg and water. Knead the dough, roll it into a ball and put it in the refrigerator for half an hour. Distribute the dough according to the shape, form the sides. Pierce the dough with a fork in several places and place it in a hot oven at 180C for 20 minutes. Fill with cream, line the quince pieces on top and put them in the oven for another 20 minutes. Dilute the jam with 2-3 tablespoons of quince syrup, boil and grease the pie with it on top. The food is ready!
