The recipe is old, tested for years by more than one generation. Preparing tubes of cottage cheese dough is very simple. The dough from the minimum number of ingredients is salty, and the filling is sweet. For the filling, you can use candied jam, boiled condensed milk and even halva. In our family, we use just sugar as a filling.

So let's start making cookie tubes from cottage cheese dough.

To prepare the dough, you need to use products at room temperature, the oil should be soft. Therefore, we take butter and cottage cheese out of the refrigerator in advance.

In a deep container, we grind cottage cheese with butter with a fork. If the cottage cheese is with large grains, then it is advisable to grind it through a sieve first. It is very important that the cottage cheese is of good quality, without the content of milk fat substitutes in it. Cottage cheese of any fat content will do. I used cottage cheese 5%.

Add salt, soda and sifted flour to the cottage cheese, ground with butter. Knead the dough well. It should not stick to your hands.

Flour may need more than indicated. Its amount depends on the fat content of cottage cheese and the quality of the flour itself.

Immediately proceed to the formation of cookies (the dough does not need to be cooled). I form tubes of cottage cheese dough in two ways:

1. Roll the sausage out of the dough and cut it across into pieces. We roll each piece into a ball, then roll out a circle from it with a rolling pin. A circle of dough is sprinkled with sugar and rolled into a tube.

2. Roll out a large piece of dough into a large circle. With a knife, we cut the circle into eight sectors (like a pizza). Each such sector is sprinkled with sugar and rolled into a tube. It turns out a more textured tube than in the first version, more similar to a bagel.

We spread the tubes of cottage cheese dough on a baking sheet covered with parchment or baking paper. Bake in the oven for 20-25 minutes at a temperature of 200 degrees.

Sprinkle the finished and already cooled tubes with powdered sugar.
