Lean chocolate-nut cookies with vanilla sugar

A successful recipe for lean (vegetarian) homemade cookies. Today I want to offer a recipe for lean (vegetarian) chocolate cookies with nuts. Cookies are made from the simplest ingredients, it turns out fragrant, tender and crumbly.

    In a deep bowl, sift flour, cocoa and baking powder. Add sugar, vanilla sugar and nuts. Nuts can be crushed with a blender, or you can just chop them with a knife so that the cookies not only have a nutty taste, but also feel the nuts themselves.

    Mix everything well. In the middle of the dry mixture, we make a small recess. Pour refined sunflower oil into the dry mixture, mix, and then gradually add water. We do not pour out all the water at once, as it may need a little more or less than according to the recipe. Therefore, I add water gradually in parts, achieving the desired consistency of the dough.

    Knead the dough first with a spoon, then with your hands. The result should be a cool, but soft, non-sticky and obedient dough that is easily torn apart. The finished dough can be rolled out into a layer no more than 1 cm thick and cut out figures of future cookies from it with molds, or simply tear small pieces from the dough, roll them into a ball, slightly flatten.

    We spread the future cookies on a baking sheet covered with baking paper. I put the blanks at a small distance from each other, since during the baking process the cookies will increase slightly in size. I put the baking sheet with the dough in a preheated 180 degree oven and bake for about 15 minutes. It is important not to overdo it in the oven, otherwise it will dry out and may become stiff. We check the readiness of the cookies with a wooden stick.

    When leaving it, the stick should be dry, without traces of dough. The finished cookie, while it is still hot, is soft but elastic when pressed. Leave the cookies on the baking sheet until completely cooled. Then sprinkle with powdered sugar and transfer to a plate. Lean chocolate cookies with nuts are ready! Enjoy your meal!

The rules of nutrition in the Orthodox Fast are strict, but not inhumane. And if you can't imagine life without fresh pastries, then know: there is not a single canon prohibiting it. Of course, lean pastries cannot be rich, that is, they contain eggs, butter and anything dairy, but it is quite possible to cook delicious lean cookies at home.
