Crostata with apricot filling

Italian shortbread fruit pie. The pie under this name is little known here, but in Italy it is quite popular because of its simplicity of preparation. The main feature of the crostata is that it is made open and decorated with a mesh of dough strips on top. Served only cold.

    1/3 of the test separate. Wrap each part separately in plastic wrap and put it in the refrigerator for 40 minutes. It will be easier to work with the cooled dough.

    If necessary, cover the prepared baking dish with oiled parchment. On a table sprinkled with flour, roll out most of the dough. Transfer the dough to the mold, flatten along the bottom, make the sides at least 3 cm high.

    Put jam on the dough.

    Take the remaining dough out of the refrigerator, roll it out on a floured table into a layer. Cut into strips about 1 cm wide.

    Lay the strips on top of the filling in the form of a mesh.

    I have a few strips left, I connected them to the sides. The sides must be bent to the filling and slightly pressed.

    Bake the pie in a preheated 190 degree oven for 30 minutes until golden brown.

Italian crostata does not have a strictly defined recipe, so you can show imagination and cook based on your tastes.
Pie can be sweet and snack. But the first option is still a priority.
Any thick jam, jam or confiture is suitable for filling. You can also use fresh fruits or berries, add any nuts.
