It is quite difficult to make puff pastry yourself, so most often it is bought ready-made, frozen. This guarantees precise compliance with the technology and obtaining a lush, truly layered cake as a result. A few hours before cooking the pie or in the morning, before work, we take out the dough from their freezer. If there is not enough time, we put it right on the table, if all day - in the refrigerator for a smoother defrosting.

The second main ingredient of this puff pastry is fish, or rather minced meat. You can use fish pieces and generally experiment with fillings in every possible way, but there are several advantages in minced meat. With it, the pie turns out to be more tender, it is baked faster, the filling becomes soft and juicy. And, last but not least, there are no bones in the minced fish. Even if they were in a piece, after processing with a meat grinder, they definitely did not remain, which means that even babies can be given a pie without danger.

Minced meat, like puff pastry, can be bought ready-made, it is sold frozen in departments with fish semi-finished products. If there is a desire to cook on your own, we cut the fillet of any fish into pieces and grind it in a meat grinder twice.

So, the dough and minced meat are ready and defrosted, we can start cooking fish puff pastry. Immediately turn on the oven at 200 degrees.

Cut the onion into thin half rings and send it to a deep plate. Sprinkle with salt and ground pepper and knead well with your hands, he should let the juice.

We transfer the minced fish to the onion and mix the future filling well. The ingredients should be evenly combined so that the taste and texture are uniform in the finished dish.

Cut a small piece from the dough for decoration. Next, if the puff pastry was sold in one sheet, divide it into 2 parts (one slightly larger than the other). We take most of it and put it on a table dusted with flour. If the dough is several identical rectangles, just take one piece. We roll out the dough according to the size of the baking dish, not forgetting about the formation of the walls.

We put the dough into the mold, and in the middle we evenly place the filling, leave free space at the edges to form the sides of the pie. We roll out the second part of the dough, cover the filling and connect it around the perimeter.

Cut out the decorations from the remaining piece of dough, spread them on top, add pepper peas (you can think of any decorations) and lubricate the whole cake with yolk.

Bake for 35 minutes. We take it out of the oven hot, let it cool down a little and serve it to the table.
