First you need to "pickle" the apples with raisins.
Peel the zest from the lemon. Next, you need to squeeze the juice out of the lemon, pass it through a sieve to remove the bones.
Put the zest removed earlier in the juice.
Put slices of peeled and cored apples in a bowl with lemon zest and juice. Mix it up.
Add pure raisins.
 Mix again and leave for about an hour, stir from time to time so that the apples with raisins are soaked from all sides with lemon juice and aroma. The raisins will absorb the lemon juice.
Mash the cottage cheese with a fork to remove large lumps. 
 Put 4 yolks, grind them, add vanilla sugar and semolina, soft butter. Stir, set aside. 
Beat the remaining egg whites together with a pinch of salt into a fluffy foam. Add sugar, beat. Put the curd mixture into the resulting protein mass.
Mix and add apples with raisins. Mix again. The baking dish is well lubricated with butter and sprinkle with semolina.
& nbsp; Put the oven at 180 degrees.
Put baking powder in the finished curd mass, mix and fill the mold. Flatten, put an apple on top, left for decoration, which needs to be cut into slices. Put in a preheated oven and bake for 60-80 minutes. Leave in the oven until completely cooled. If you cut the casserole hot, it will not hold its shape.
