Its main difference from other similar pies is the presence of a delicate meringue on the top. The food turns out to be extremely tender, the pie is suitable for home holidays.

Thoroughly rub three yolks with half a cup of sugar, add butter at room temperature, soda slaked in sour cream, a pinch of salt and two cups of wheat flour. We should get an elastic dough that should not stick to the fingers. We wrap it with plastic wrap and put it in the refrigerator for an hour. At this time, peel the apples and cut them into semicircles (thin), sprinkle with lemon juice. We drive one yolk into a bowl, pour one third of a glass of sugar, put the cottage cheese and carefully rub everything into a homogeneous mass.
Roll out the cooled dough one centimeter thick, put it on a baking sheet, make the sides. Cover with an even layer of cottage cheese, then spread the apples with a ladder, sprinkle with cinnamon and sugar (especially if the apples are unsweetened). We send it to bake in the oven for about forty minutes. Chilled proteins (4 pieces) are whipped at high speed with a mixer, pour in two cups of granulated sugar. We spread the proteins on the not fully baked pie and bake further until ready.
