Baked spicy eggplant without butter with cheese

A stunningly delicious snack with cheese and tomatoes! I love eggplant passionately. In the summer I grow them in the country, in the rest of the year I certainly buy them in shops and supermarkets. I know a lot of culinary recipes for cooking this food and now I would like to share one of my most favorite recipes, namely the one called simply eggplant baked in the oven.
