Homemade puff pastry cheese croissants

Airy croissants with crispy crust and delicate cheese filling. What could be better than fresh homemade pastries for breakfast or for an evening tea party? Especially if it's French puff pastry croissants. Crispy on the outside, soft, fragrant, cheesy on the inside! Real favorites among pies and buns in our family :)

Cooking method

Cooking time: 3 h 10 min

1. Sift the flour, add dry yeast, salt and sugar to it. Mix it up.

2. Pour milk, kefir, vegetable oil into the flour mixture, break the egg.

3. Knead the dough. Knead it to a homogeneous consistency until it stops sticking to your hands.

4. Put the dough in a bowl, cover with a towel and put in a warm place for 1.5 hours. During this time, it should increase significantly in volume.

5. Divide the dough into three equal parts, form balls. Cover them and let them stand for 15 minutes.

6. At this time, grate the cheese and melt the butter.

7. Roll out one of the balls into a round layer with a diameter of about 30 cm, brush it with butter and sprinkle with cheese.

8. Roll out the second ball into the same layer and cover the first one with it. Also lubricate the surface of the second circle with oil and sprinkle with cheese.

9. Repeat step 8 with the third ball of dough.

10. Cut the resulting layer cake into 8 sectors, which you twist into croissants.

11. Place the future croissants on a baking sheet lined with parchment. Cover them and let them stand for 20 minutes.

12. Beat the yolk a little, smear it on the surface of the croissants, sprinkle with cheese.

13. Place the baking sheet in a preheated oven for 15 minutes. If you like more baked and crispy croissants, you need to increase the time. I usually bake for more than 20 minutes.
