Goose with apple-rum filling

Be careful! So delicious that it is addictive! A very tasty and festive culinary recipe - goose with apple-rum filling - from my English girlfriend. I think you'll like it too. As Ostap Bender said, eat the goose, drink the rum, and give the apples to the neighbor. I love to cook this goose with apples for Christmas or New Year.

Our goose is cleaned, washed, dried and rubbed with salt.
Prepare the filling. Wash the apples, remove the seeds and the core, chop coarsely. Rinse the raisins. Combine all this: apples, raisins and plums. Then pour the rum. Add marjoram and crackers there. And mix it all thoroughly.
Stuff the goose with the stuffing prepared by us.
Carefully place the stuffed goose on the grill with the goose breast down and preheat the oven to 200 degrees. Put the grate with the goose in the oven, and put it from the bottom and pour it into it, that is, into 0.5 liters of water.
Bake for 1 hour, occasionally pour the juice on top. Then turn the goose over and bake for another hour. Cheer up the goose a little, pour slightly salty cool water and let the crust brown.
Drain the separated goose fat into a saucepan. Well, then add the cream. Pepper it. Add salt. Stir, put on a hot stove and let it boil for a while.
When everything is ready, the goose should be cut into portions and served to the table.
