Borscht with mushrooms and beans in a slow cooker

I always cook this delicious, healthy and satisfying borscht in Lent! My family loves him very much and is always very much waiting for him . Of course, as they say, as many users as there are borscht recipes. But I want to offer you my recipe. This is the way I began to cook it after I got my first slow cooker five years ago. The peculiarity of the recipe is that I don't fry anything except onions and mushrooms.

Cooking method

First of all, soak the beans overnight. Finely chop the onion and fry for 7 minutes in a slow cooker on the "Frying" mode or, if you do not have such a mode, then "Baking", add the peeled and chopped mushrooms there and fry for another 10 minutes.
Add the beans to the mushrooms, fill with water and boil on the "Soup" mode for 40 minutes (until the beans are ready). We cut carrots, beets and bell peppers into strips, chop cabbage, peel potatoes and cut into 4 parts.
We put all this in a multivarok bowl to the beans and mushrooms, add tomato paste, salt, sugar, ground black pepper (salt, sugar, pepper is, of course, to taste.
Turn on the "Soup" mode for 1 hour. When the alarm sounds about the end of the mode, I do not open the lid of the slow cooker for about an hour. That's it, borscht is ready. Already in the plates I add my favorite greens - cilantro. I wish you good luck and bon appetit!
