    How to make sauerkraut green tomatoes? Prepare all the necessary ingredients. Tomatoes select those that are well ripened, but have not yet turned red. They are not so bitter anymore, since there is less corned beef in them. Wash the vegetables and herbs thoroughly.

    Pour two liters of cold water into a large bowl and add one tablespoon of salt, mix until dissolved. Put the green tomatoes in it and leave for 30 minutes, drain and pour salt water again, leave for another 30 minutes. Drain the water, and rinse the tomato with cold water.

    Wash the jar thoroughly with hot water and baking soda and rinse well. If desired, you can sterilize the jar, but in this method it is not necessary. Put parsley, horseradish leaves, dill umbrella and garlic cloves on the bottom of the jar.

    Put the green pepper on the bottom of the jar. If the pepper is very large, cut it in half.

    Put green tomatoes in a jar, all the way to the top. Cover them with dill and horseradish leaf on top.

    Pour the tomatoes with the solution and cover the jars with plastic lids. Leave at room temperature for 3 days. During this time, natural fermentation will occur due to lactic acid, which is formed during fermentation. That is why the jar is not immediately closed tightly with a lid, but only covered. After that, close it with a tight plastic lid and put it in the cellar or another dark, cold place.

Follow the basic rules of conservation so that your billet is stored for a long time and without problems:
- wash vegetables thoroughly, even if you peel them
- remove any debris, dirt, earth from fruits and greenery
- get rid of rotten foods
- do not reduce the amount of preservatives and follow the tips described in the recipe
- sterilize empty cans (10 minutes - 0.5 liters; 15 minutes - 1 liter; 20 minutes - 2 liters; 25 minutes - 3 liters).

If you are new to canning, have little experience in home preparations, it is better to be safe and sterilize cans of vegetables, even if the recipe says the opposite . This guarantees you that the banks will not swell during storage if you did something wrong, did not report something/shifted or violated the technology.
Remember that banks swell more often for the only reason: excess gases are formed in them . And those, in turn, appear because they are isolated by microorganisms trapped in the workpiece .
Anyway, the swelling of the cans has nothing to do with the quality of the recipe, which has already been successfully prepared.
