1. Before working with the peel, it must be thoroughly washed. It is better to do this in hot water, using a brush, so that you can definitely wash off all the compounds that citrus fruits are treated with.

2. We remove the peel with a special knife for the peel, you can also use a vegetable peeler. For seasoning, we use only the yellow part of the zest, so we do not touch the white part.

3. Spread the strips of zest on the dish in a thin layer and leave at room temperature to dry, for about 2 days. It can also be dried in the oven with the door open and a temperature of 100 degrees.

4. The already dried zest is ground into powder using a coffee grinder or blender. We put the powder in a container made of dark glass or in another container, it is important that the lid is tightly closed so that the smell does not fade.
