Rice with tomatoes under a fur coat

An amazing delicious and satisfying dish for vegetarians or for fasting! The rice turned out to be so crumbly and delicious, but it's not even worth talking about the usefulness of such a dish. Cooking rice in this version was a real discovery for me. Now in the vegetable season I cook rice with tomatoes just like that and very often. It is very relevant in the post and for vegetarians - an absolutely satisfying dish!

Pour vegetable oil into a frying pan with a thick bottom.

  Diced zucchini, onion and three carrots on a medium grater. Put the zucchini in the heated oil first, then the carrots and onions on top. Fry for about 5 minutes, do not forget to add salt, stir and turn off the gas temporarily.



 Wash the rice, cut the tomatoes into slices, pepper into strips.

 Put rice in the pan on the prepared vegetables, do not forget to add a little salt, level it, put tomatoes on top, then pepper.



Sprinkle with herbs.
Close the lid and simmer for about an hour. There is no need to pour water, there is enough oil and the released juice from vegetables.
