Bear meat soup

Thick rich soup with oriental notes! Very fragrant! Very thick, incredibly fragrant, nourishing and nutritious, amazingly delicious and unusual soup with bear meat. To be honest, I was inspired by oriental cooking recipes, since in the case of bear meat, which is quite dense, this is an ideal option. Try it!

Cooking method

Cooking time: 7 h 50 min

Cut the meat into large pieces. Do not forget to wash it thoroughly beforehand. We put the meat in a deep container and prepare the liquid for soaking:

- bring the water to a boil;

- add cloves, bay leaf, allspice, juniper berries;

- boil everything together for 10 minutes;

- pour salt and sugar, ground black pepper, mix;

- pour vinegar and keep on fire for another 5 minutes;

- filter the liquid and let it cool down a little.

Pour the cooked aromatic liquid over the meat and leave it for 4 hours. At this time, we prepare vegetables and herbs:

- peel the onion, cut it into half rings;

- peel the garlic cloves, cut into several pieces;

- bulgarian pepper is freed from seeds and cut into large pieces;

- cut peeled potatoes into large cubes, cut eggplant into the same cubes;

- carrots are cleaned and cut into circles;

- tomatoes are cut large - best of all in circles:

- finely chop cilantro and basil.

Time has passed - we warm up the cauldron with vegetable oil, spread the meat and fry it on high heat for five minutes. In the process, add salt and ground black pepper. Then turn down the heat and add the vegetables. It is best to put them in layers, and sprinkle chopped herbs between the layers.

Fill the cauldron with water and cook everything together on low heat for 2.5 hours.

We serve a fragrant dish hot!
