Armenian pilaf without meat from spelt - acharov pilaf

Wonderful pilaf of wheat groats with chicken and mushrooms. Pilaf turns out much tastier with chicken broth. For health reasons, I put out mushrooms and onions in the recipe. If desired, they can be fried. The cooking time of pilaf depends on the quality of the spelt, so it is difficult to determine the specific cooking time. On average, it cooks for 1.5 - 2 hours.

    Put out the onion and mushrooms.

    Boil the spelt.

Soak the spelt for 3 hours in hot water.
Cut onions, mushrooms, put them out in a small amount of water
Rinse the spelt, put it in a saucepan, pour hot water. Put on high heat. As soon as the water begins to boil, reduce to a low heat and cook until tender.
Half an hour before cooking, put the mushrooms and onions in a saucepan with spelt, mix and cook the pilaf over low heat until fully cooked (if necessary, add a small amount of water).
Serve as a side dish to boiled chicken or fish.
