To make a delicious and healthy soup, you can use this recipe. Such food as bean soup-puree with pearl barley, although it is not quick to prepare, but it is simple.
In the evening we will put the beans in a saucepan with water and leave them to soak overnight.
The next day, we will drain the water from the beans, rinse it, add a dollop of fresh water, and put it on the fire. When the beans boil, reduce the heat and cook it for about an hour and a half. The cooking time of beans can vary greatly, depending on its variety and hardness. In general, you need to cook it until it becomes soft. A few minutes before cooking, put the onion in a saucepan.
Pour water into the second saucepan, salt it and put the pre-washed pearl barley. Grits should be cooked for about 45-50 minutes. Periodically, the grits need to be stirred.
When the pearl barley is cooked, we will drain the water from the pan and transfer the pearl barley to a frying pan with heated oil. Add garlic to the same place. Fry the pearl barley for a couple of minutes, and add herbs. After that, fry for another minute and, with salt and pepper, remove from the heat.
Meanwhile, we will pour the beans cooked together with onions and broth into a blender to turn into mashed potatoes. When the puree is ready, add a little oil to it and you can gently heat it again. Let's add salt and pepper.
Before serving, pour the puree into the plate first, and add the pearl barley with herbs on top. So the soup is ready. Enjoy your meal.
