    How to fry eggplants like mushrooms? Prepare all the necessary products for the recipe. You can peel the eggplant beforehand, I usually don't do this and cook the blue ones as they are.

    Cut the eggplant into small cubes. If you have a variety of blue ones that are bitter, then soak the cubes in salt water for 15-20 minutes. Then drain the water and dry the eggplants.

    Wash and dry the eggs. Drive them into a deep small container and whisk with a whisk or fork until smooth.

    Send the eggplants to a deep, suitable-sized dish. Pour in the egg mass and mix well. Each piece should be covered with egg filling. Cover the bowl with plastic wrap or a lid and send it to the refrigerator for 30-60 minutes.

    Peel the onion and garlic, rinse and dry with paper napkins. Cut the onion into small cubes, and pass the garlic through a press or chop with a knife.

    At the end of cooking, salt the blue ones to taste. Pepper if desired. Make the fire to the maximum and, stirring constantly, cook until an appetizing brown crust appears (1-3 minutes will be quite enough).

    Sprinkle the finished dish with fresh herbs, chopped finely. Green onions, parsley or dill are well suited. Ready, you can serve!
