    Prepare all the necessary products. Choose a bigger knuckle so that there is not only a bone, but also more meat on it. The best thing is the shank of a young piglet - it will be with a thin white skin - such meat will be more tender.

    Wash the knuckle well, dry it, make a few deep punctures with a thin sharp knife.

    Insert thin slices of chopped garlic into the recesses of the knife (leave the garlic clove for the marinade)

    We will need soy sauce for the marinade. Now there are a lot of soy sauce options in stores that are quite inexpensive at a price. But choose soy sauce only of natural fermentation - it is a completely natural product. Even better, if you find soy sauce that is intended directly for the marinade. Add chopped garlic to the soy sauce. I put a clove through the press, but you can grate the garlic or chop it with a knife.

    Add ground pepper and stir the marinade. At this stage, you can add some of your favorite spices or herbs to the marinade: someone likes hops-suneli, someone will have enough ground hot pepper or paprika. I do not recommend adding salt, because soy sauce is quite salty by itself.

    Pour marinade over the knuckle and leave for at least 30 minutes, for a maximum of a day. I recommend periodically turning the knuckle over so that it is evenly pickled.

    Put the pickled knuckle in the baking sleeve, secure the edge with a clip.

    Make several punctures with a toothpick so that the steam has an outlet and the sleeve does not burst. Bake in a preheated 180 degree oven for about 2 hours. The knuckle should be well baked. If you like fried pork skin, 20-30 minutes before the end of cooking, tear the sleeve from above and let the skin turn brown.

    Such baked knuckle can be served as a main dish, but it is also delicious cold as a slicing. Enjoy your meal!
