    Peel the potatoes and cut them into large or medium slices. This is necessary so that the potatoes do not boil during stewing. If the potatoes are small, then you can leave them whole. For this dish, new potatoes are great, which you need to scrape with a knife to peel off the upper thin skin.

    Peel the carrots and cut them into semicircles. If the carrot is young with a small diameter, cut it into medium pieces so that it does not boil during stewing.

    In a deep frying pan or saucepan with a thick bottom, heat the vegetable oil for frying. Add carrots and garlic. Stir-fry them over low heat for 3-5 minutes, stirring occasionally.

    Pour in about 2 glasses of water so that the contents are more than half covered. Determine the thickness of the dish according to your taste. If you want it thinner, add more liquid, thicker — less.

    Cover the pan with a lid and simmer the potatoes with the ribs over medium heat for about 40 minutes until the potatoes are cooked. Determine readiness with a spoon — when pressed, the potatoes should easily break.

In addition to these vegetables, you can add other vegetables to taste, for example, bell pepper.

Instead of smoked ribs, you can use raw ones. They need to be pre-fried in vegetable oil until golden brown.
