It can be pork, chicken, beef or combined minced meat. I'm going to cook pork. It is best to cook the minced meat yourself, but if there is no such possibility, then you can buy ready-made.

    Mix minced meat with egg, salt and spices until smooth. Beat the meat mass a little on the bottom of the bowl so that the minced meat becomes denser. Thanks to this, the nests will not fall apart when baking.

    Peel, rinse and finely chop the onion.

    Wash the mushrooms well in running water, dry them and chop them not very finely.

    Pour a little vegetable oil into a hot frying pan and put the chopped onion. Fry it for a minute until transparent. Then add the mushrooms to the pan. Mix everything and fry everything together for another 5-7 minutes. During this time, all the moisture will evaporate, and the mushrooms will decrease in size.

    Finely chop or grate the pickled cucumbers on a coarse grater. Combine the fried mushrooms and cucumbers. Add the curd cheese. You can add a little salt, but keep in mind that cucumbers are salty. Mix everything together.

    Grease the baking dish with vegetable oil. From the minced meat, make small balls and make a recess in them.

Instead of fresh, you can take frozen or dried mushrooms (dried ones will need 5-6 times less than fresh ones). Frozen mushrooms can be defrosted in any convenient way (for example, in the microwave in the appropriate mode - see the instructions for your technique) and drain the liquid. Or, if the amount of liquid in the recipe is not critical, use without defrosting. Dried mushrooms should be washed well, since they are not washed before drying, and then soaked in cold water for at least 2-3 hours.
