Kefir should not be cold either. The number of apples depends on the diameter of the pie, you will need 3-5 medium fruits.

    Pour the semolina with kefir, mix well. Leave for 1 hour to allow the cereal to swell.

    Mix everything with a whisk until smooth and the sugar dissolves.

    Whisk the whites with salt first at the minimum speed of the mixer until soft peaks. Then increase the speed and whisk until a dense, stable protein foam forms.

    Add baking powder and vanilla to the dough, mix.

    Using a spatula, gently stir the proteins into the dough from the bottom up.

    Wash the apples, dry them well, and remove the seeds. If desired, the skin can also be cut off. Cut half of the apples into slices or cubes.

    Grease the mold with oil. Lay out the dough carefully. Spread the sliced apples on top. During baking, the dough will rise significantly, and the apples will be inside the pie. Why not mix the apples into the dough right away? In order not to disrupt the lush structure of the dough.

    Bake the mannikin in a preheated 180C oven for about 25 minutes. During this time, it is better not to open the oven so that the pie does not settle. When the surface of the pie visibly seizes and a visible crust appears, carefully remove the mold from the oven. Put the remaining sliced apples on the pie. Put the mold back in the oven.

    Bake the mannikin until cooked for about 25 minutes more. I used the form d=18 cm. You can take d = 22 cm, then the pie will be smaller in height. Depending on this, the baking time will also be reduced. Let the finished cake cool and remove from the mold.

I used to bake mannik rarely and it was always a classic recipe with flour. Everyone liked this version of the pie much more. Apples completely transform its taste. Now a mannikin with apples will be a more frequent "customer" of my oven.

Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information about the features of ovens !

Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with butter or margarine. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn.

In order for the oven to have time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
