Cooking method

Cooking time: 2 h 30 min

1. It is better to choose young zucchini, then you can use them with the peel. If the skin of the vegetables is rough, then we clean it and remove the seeds. Cut into cubes that will be convenient for you to grind.
2. Chop the vegetables through a meat grinder and put them in a saucepan. I use it with a thick bottom, the mass is evenly cooked on it and does not burn. Add vegetable oil to the same place. Mix everything with tomato paste, salt and add spices to taste, suneli hops and dried coriander will do well.
Simmer the mass for 1 hour, then pour vinegar.
3. The remaining ingredients are also cleaned and passed through a meat grinder. We put them in the adjika and cook on low heat for another 15 minutes.
4. The adjika is immediately laid out in sterilized jars and carefully closed with lids.
