Looking for new ideas for a family dinner? Italian cuisine to help! I got acquainted with this recipe relatively recently. But as soon as I cooked this Italian dish for my family for the first time, this dish became one of the most ordered in our house. These "overseas dumplings", as my husband calls them loving them, turn out to be very tasty and satisfying. And most importantly, depending on the sauce or vegetables with which they are served, they taste differently.

Gnocchi is one of the traditional dishes of Italian cuisine. In Italy, they are prepared from a variety of ingredients. The basis for these small oval-shaped dumplings are: semolina, cheese, potatoes, spinach, pumpkin, etc. And they are served with different sauces or simply poured with melted butter.

We start by preparing the basis for the test. To do this, we clean and cook potatoes in salted water. Drain the water and let it cool down.

Next, proceed to the process of kneading the dough:
1. Grate the cheese on a fine grater.
2. We knead the potatoes to a homogeneous puree, in the center of which we make a recess, where we drive the eggs, put half the cheese and a little flour.
3. We begin to knead the dough. Gradually add the rest of the flour – the dough should turn out soft and elastic, and most importantly - not to be sticky.

Let's move on to the stage of forming these Italian dumplings:
1. Divide the dough into several parts, from which we roll sausages about 2 cm thick.
2. We cut the sausages into small pieces, from which we form balls. We put a criss-cross pattern on each ball with a fork.

The next stage of cooking is cooking:
1. Cook them in small portions in boiling salted water. As soon as the gnocchi pop up, they are ready. Carefully we catch them with a slotted spoon and transfer them to the prepared dish.

Pour the finished gnocchi with melted butter and sprinkle with the remaining cheese. Serve with finely chopped herbs and cherry tomatoes. If desired, you can pour more sour cream.
