Cooking method

Cooking time: 1 h 15 min

1. Turn on the oven to warm up to 200 degrees Celsius. The baking dish with a diameter of 22-24 cm is lubricated with a small amount of olive oil. While the oven is heating up, we continue cooking the dish.

2. We spread the shortbread dough into the prepared form, level the sides, form the sides. Cut off the excess dough. Next, put a sheet of baking paper on top of the dough and fall asleep with dried beans, dried peas or any cereal (rice, buckwheat). We put the mold with the dough billet in the oven that has had time to warm up for 10 minutes. When this time has passed, open the oven and remove the baking paper along with the cargo. Bake the base without a load for another 10 minutes. The base of the pie should become a beautiful golden color.

3. While the base is baking, we prepare the products necessary for the filling:

- remove the husk from the onion, rinse it under cool water, lightly dry it with a towel and finely chop,

- spread the bacon on a cutting board and cut into small cubes,

- cheese, and it's better to take some fragrant variety, three on a medium grater.

3. We put a large frying pan on medium heat, pour olive oil into it, heat it up. When this happens, put the chopped onion and bacon in the butter. Fry together, stirring them periodically, for 3 minutes. After that, we spread the onion and bacon on a layer of paper towels to absorb excess fat.

4. Spread the fried onions and bacon on the baked base of the pie, and sprinkle everything evenly with grated cheese on top.

5. The temperature in the oven is reduced to 180 degrees Celsius. In a bowl of a suitable size, we spread sour cream, pour milk, break eggs, pour flour. Beat everything with a mixer. Then add salt and ground black pepper, whisk again and taste. If necessary, add more salt.

6. With the resulting sour cream-egg mixture, pour the base over bacon, onion and cheese. Put the lauren quiche in the oven and bake for 30-35 minutes. Then we remove the mold from the oven, wait 5 minutes, and then serve the pie on the table. You need to eat the pie hot!

Bon appetit!
