Step 1:
How to make a salad with smoked chicken and cheese? First, prepare the necessary ingredients according to the list. Meat from the smoked breast can be replaced with meat from the shins or hams. Smoked chicken can be replaced with boiled or fried. You can take any soft cheese that you like to taste: cottage cheese, melted or feta. I have cottage cheese without additives. Wash and dry the salad leaves.
Step 2:
If desired, you can add about 80 g of olives or pitted olives. Remove the pitted olives from the brine and dry them.
Step 3:
Peel the smoked breast from the skin and bones and cut into thin slices.
Step 4:
Cut tomatoes in half. I have cherry tomatoes, but you can replace them with regular tomatoes. Tomatoes need juicy, but dense. Soft fruits do not keep their shape well, in the process of slicing and cooking they will spread into a shapeless mass and spoil the appearance of the dish.
Step 5:
Peel the red onion and cut it into thin rings or half rings. If desired, you can marinate the onion in 2 tbsp vinegar and 1 tbsp sugar. Or replace the red onion with onion, but it will need to be pickled to remove the sharpness and bitterness.
Step 6:
Now prepare the dressing. You can add or replace ingredients to taste. You can take any mustard: grainy, like mine, or in the form of a ready-made paste. Vegetable oil - any to taste. I have olive oil.
Step 7:
In a bowl, combine vegetable oil, lemon juice, liquid honey, mustard, garlic clove passed through the press, salt and pepper. Whisk everything thoroughly with a fork until smooth.
Step 8:
Put lettuce leaves on the dish. Spread the smoked chicken, tomatoes and red onion on top. With a teaspoon, lay out small dumplings of cottage cheese.
Step 9:
Pour honey mustard dressing over the salad.
Step 10:
And at the very end, scatter whole pitted olives over the salad. You can immediately serve the salad to the table. Enjoy your meal!

How to choose the right olives? It is better to buy the product in a transparent package. So you can see their appearance and color. If the olives are too black, then food dyes have been added. The fruits should be elastic, whole, with a smooth, shiny skin. Too soft, overripe olives will not be stored for a long time.
To avoid irritating the mucous membrane of the eyes when slicing onions, rinse the onion and knife with cold water. The cutting board will not absorb the unpleasant onion smell if you rub it with a piece of lemon before slicing.
