Kharcho soup with potatoes and rice

Classic, rich, simple, beef. This is the first dish of Georgian cuisine on meat with the addition of rice, seasonings, spices and herbs. For more satiety, potatoes are added to the Kharcho soup, although historically it is not included in the recipe. Modern cooking treats such innovations condescendingly.

    How to cook kharcho with potatoes? Prepare all the necessary ingredients for the preparation of this dish.

    Wash the beef, dry it, then cut into 2-3 cm cubes. This soup can be made from any meat: beef, lamb, as well as pork or chicken. In any case, the soup will turn out delicious.

    Put the chopped meat in a saucepan, fill with water and put on fire. Bring the contents of the pan to a boil, then reduce the heat, cover the pan with a lid and continue cooking the meat for 1.5 hours. Using a slotted spoon, periodically remove the foam from the surface of the broth so that it is not cloudy.

    While the meat is cooking, prepare the other ingredients. Soak the rice in warm water. Wash the potatoes, peel them with a vegetable peeler, then cut into small cubes, about 1-2 cm.

    Peel the garlic and onion from the husk. Chop the onion finely. If desired, the onion can be grated on a fine grater. Also chop the garlic, either by finely chopping it, or by passing it through a garlic press.

    Now take care of the tomatoes. If desired, they can be replaced with 4 tablespoons of tomato sauce. Pour boiling water over the tomatoes, literally for 1 minute, then place them in cold water, then remove the peel from the tomatoes and cut into cubes the same size as the potatoes were cut.

    Fry the chopped onion in a frying pan with the addition of olive oil for 2-3 minutes, until light golden brown. Then add half of the chopped tomatoes to the onion in the pan. Stirring occasionally, simmer the vegetables for 5-7 minutes.

    When the beef is cooked and soft, add the rice, potatoes and remaining cubes of tomatoes to the pan. Continue to cook the soup until the rice potatoes are ready, about 15-20 minutes.

    After that, add the toasting, spices and salt to the soup. Boil all the ingredients for another 5-10 minutes, then turn off the heat, add garlic. Let the soup brew for another 5-7 minutes.

    Sprinkle the soup with coriander or any other herbs. It can be dill or parsley.

The amount of water specified in the recipe can be reduced or increased at your request, depending on whether you want to get a thick or more liquid soup.

Beef can be replaced with any other type of meat that you like best. But keep in mind that the cooking time, as well as the taste and calorie content of the dish will change. Pork and lamb tend to be fatter than beef, and chicken fillet or turkey are leaner. At the same time, the cooking time depends not only on the type of meat, but also on which part of the carcass is used and how old or young the meat is.
