Dumplings with mushrooms

Special taste of the classic dough and mushroom minced meat. Quite a hearty dish, and therefore ideal for dinner. These vegetarian dumplings are perfectly combined with green onions and soy sauce. But they can also be used with sour cream – for those who prefer the classic version.

Step-by-step cooking

  1. Step 1:

    In boiling water, dissolve 0.5 tsp of salt. In the container, sift the flour through a sieve. In the center we make a recess and pour into it salted boiling water, a little vegetable oil (15 gr.). Knead the dough first with a wooden spatula, then continue to knead the dough with your hands. When the dough comes together in one lump, put it on the work surface and continue to knead it for another 7 minutes. Next, put the dough in a plastic bag and leave to rest for 30 minutes.

    Now let's prepare the filling mushroom filling. My champignons, removing dark places. Cut the champignons coarsely. The shape of the slicing is not important, because later they will be passed through a meat grinder. We put the chopped mushrooms in a frying pan, add a little vegetable oil and fry them over medium heat until the liquid completely evaporates and is ruddy.

    Peel the onion and cut into half rings. We take a clean frying pan and put the chopped onion on it, add a little vegetable oil and fry it until golden brown.

    Next, we combine onions and mushrooms, pass them through a meat grinder or chop them using a food processor (after trying 2 options, I realized that the second option is much better than the first. So much tastier than a single minced mass), add salt, mix well. The filling for the dumplings is ready.

    Back to the test. We take a piece of dough (we leave the rest in the package) and roll it into a thin layer 2 mm thick. Using a special mold or glass, we cut out the mugs. For each circle in the center we put 1 tsp of filling.

    We fold each circle in half, pinch the dough around the perimeter, then connect the ends together to make a dumpling. We do this procedure with all the dumplings.

    We put the already molded dumplings on a board sprinkled with flour. The board with the dumplings is sent to the freezer, and after a while, when they are already cooled and will not stick to each other, we put the dumplings in a bag and send them back to be stored in the freezer.

    Cook the dumplings in salted water brought to a boil. After they float to the surface, cook them for just a couple of minutes, after which we put them on plates. If desired, lubricate them with a small amount of vegetable oil and sprinkle with chopped green onions.

Tips:
1)If the dough is dry, then its edges can be lubricated with water for better stickiness and only then glue the dumplings.
2)Mushrooms and onions are fried separately. If you fry them together, then the onion in this case is not caramelized, but stewed in juice, which is produced by champignons. As a result, the mushrooms will be simply boiled and not tasty.
3)Fry the mushrooms until the liquid has completely evaporated. If the liquid remains, then later the filling will become wet and the dough will get wet during modeling.
