    How to make basil sauce? Prepare the ingredients. Basil for this sauce, take any — both green and purple. Olive oil is best suited for the first pressing, but, in the absence, you can take any one you have. I sometimes use the most common vegetable, refined.

    Wash the basil greens well and dry them with paper towels. Tear off the leaves from the stems, the basil stalks are coarse and it will be difficult to chop them. You can use them when cooking broth or stewing meat. Or finely chop the stems with a knife and dry them, then add dry ones to any dishes for flavor.

    Peel the garlic cloves and put them together with the basil greens in a blender. Grind them into a mushy mass. For grinding, you can take either a stationary blender, or a chopper nozzle from a mixer, or an immersion blender. If there is absolutely no technique at hand, then try to make the sauce the old-fashioned way — in a mortar. It won't be easy, but that's exactly how Italian housewives did the sauce before the appearance of blenders.

    Add olive oil, lemon juice, salt and ground black pepper to taste. Whisk again with a blender until smooth. Put the sauce in small clean jars and store in the refrigerator.

Adjust the consistency of the sauce with the amount of oil and lemon juice: if you want thicker, add them less, liquid — more. Be sure to taste the sauce and add salt and pepper to taste.

If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
