Step-by-step cooking

Cooking time: 10 min
  1. Step 1:

    Step 1.

How to make mulled wine from homemade wine? Prepare the products. Take dry or semi-dry red wine for making mulled wine. If your wine is with sugar, then add sugar to the mulled wine to taste or completely exclude it. Do not take fortified wines, with them the drink will turn out to be too tart. Cane sugar will give an interesting taste, it will add a touch of caramel to the finished drink.

  2. Step 2:

    Step 2.

Wash the lemon with soda and brush under hot water to remove the wax that is applied to the fruit for long storage. Remove the zest, I did it with a vegetable peeler, you can just grate it on a grater. Do not touch the white layer under the yellow skin of the lemon, it will be bitter.

  3. Step 3:

    Step 3.

To cook mulled wine, take an enameled saucepan of a suitable volume. Pour sugar into it, put all the spices and lemon zest, mix. From spices I took cinnamon, cardamom, cloves and nutmeg. Spices for the drink are best suited, of course, whole, not ground. From the latter, the wine becomes cloudy. But in the absence, you can put what you have. In addition to cinnamon, cloves and cardamom, stars of star anise and allspice are excellent.

  4. Step 4:

    Step 4.

Pour wine into a saucepan, stir well.

  5. Step 5:

    Step 5.

Put the pan on a low heat. Cook, stirring the drink with a spoon, helping the sugar to dissolve.

  6. Step 6:

    Step 6.

Bring the mulled wine to a hot state, but do not boil it in any case. The temperature should reach about 80 degrees.

  7. Step 7:

    Step 7.

Remove the drink from the heat and immediately pour into mugs. It is better to strain it so that the spices and zest do not get into the glass. Serve the mulled wine immediately, hot.

Mulled wine is often prepared with the addition of fruit. Apple, pear, orange is a great option! Cut them into slices or circles and boil them together with wine. It is no longer necessary to filter them, pieces of fruit only decorate the drink. Besides, they are very tasty.
In addition to lemon zest, you can also put orange zest or other citrus fruits. Ginger root gives the drink a bright taste.
Sugar can be replaced with honey, just add it to the finished mulled wine, wait until it cools down so that honey does not lose its useful properties.
Mulled wine can be prepared in a non-alcoholic version. Instead of wine, take juice: grape, cherry or pomegranate.

Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
