Cooksi noodles with baked vegetables

A healthy lean dish and at the same time extremely tasty. It does not require much time to prepare, you can eat it as a cold salad with pasta. Suitable for a lean table. Very tasty. We tried something similar at a party, but with stewed vegetables and buckwheat noodles.

Half of the cooksi is prepared almost independently with a minimum of your participation in the oven.
1. We put water for cooksi noodles. In boiled and salted water, they cook for only 2 (!!!) minutes. It's very fast, so it's convenient for many housewives, especially with babies.
2. While the water for the kuksu boils, we switch to vegetables. Everything is washed, cleaned, cut into rings. We put layers in a bag-sleeve for baking (onions, tomatoes are better up), salt each layer a little, lay garlic cloves, add herbs. We tie the sleeve and put it in the oven for 170-180 for 30-40 minutes.
3. Boil the kuksa, pour olive oil.
4. Mix the kuksu noodles with baked vegetables and decorate with herbs.
