It is better to take lean beef without streaks and fat, onion and pickled cucumbers of medium size, champignons – fresh. If you do not add pickled cucumbers during cooking, then instead of fresh champignons, it is better to add pickled ones. They will give the salad a brighter taste.

    Boil lean beef in slightly salted water in advance. If desired, when cooking, spices can be added to the water, for example, bay leaf and peas of black or allspice.

    After cooking, let the meat cool completely in water. Transfer the cooled boiled beef to a board and cut it along the fibers and across with strips 2-2.5 cm long.

Then let the vegetables cool down. it is not necessary to fry mushrooms too much.

    Put the pickled cucumbers on a board and cut into strips. Drain the cucumber juice formed on the board into the sink, excess liquid in the salad is not needed.

    Put all the prepared ingredients (beef straws, fried mushrooms with onions, pickled cucumbers straws) in a salad bowl, also add Korean carrots. Season the salad with mayonnaise and mix. If necessary, add salt to the salad according to your taste sensations.

It is better to fry mushrooms with onions over medium heat in a small amount of oil, so less oil will get into the salad and it will be less greasy. And the oil that gets into the salad will be taken over by pieces of boiled beef.

Buy fresh mushrooms of medium size, snow-white color without spots, damage, rot smell. They should not be slippery to the touch. Thoroughly rinse the mushrooms from the ground under a stream of warm or cold water. Cut out the damaged places, if there are any. Miniature mushrooms up to 2 cm in size do not need to be cleaned at all, it is enough to rinse them well. Larger champignons are recommended to be cleaned from films.
