1. To prepare homemade ham, you should choose high-quality meat. A flat rectangular beef crumb will do well. The meat is washed under running water, then dried with paper towels. Cut off excess fat from the surface, if available.

2. Garlic is peeled from the husk, passed through a press. You can also grate garlic on a fine grater. The main thing in the end is to get garlic gruel.

3. We break the bay leaf into pieces, put it in a mortar. Here we add peas of black pepper and ground coriander. Rub the spices with a pestle.

4. Pour the resulting fragrant mixture into a bowl, add salt here, add fragrant ground pepper and a mixture of Italian herbs. Mix it up. Combine spices with garlic mush, mix well.

5. And now we rub beef with a mixture of spices, herbs and garlic. Rub generously, from all sides. The prepared meat is rolled into a tight roll.

6. The resulting meatloaf is fixed with a cooking grid. We tie the ends on both sides. If you can't get such a mesh in any way, you can use a pharmacy tubular bandage, it is perfect for this purpose.

7. We pack the workpiece into a baking sleeve, try to completely expel the air. For greater reliability, we pack it in another sleeve, expel the air, fix the ends.

8. Pour water into a saucepan of a suitable size. The water should be at room temperature. We immerse a bag of meat in this water. The water should completely cover the meat. And so that the bundle does not float to the surface, we install a suitable load.

9. We send the pan to medium heat. When the water boils, reduce the heat to a minimum. Cook the meat for 5 hours. Of course, during this time, the water in the pan will boil out, each time, if necessary, we add hot water.

10. After the specified time, we remove the bundle from the pan, transfer it to a deep bowl. Let the meat cool down, and then carefully untie the sleeve and take the meat out of it.

11. We put the ham in a bowl, cover it with a lid and send it to the refrigerator for two hours.

12. After waiting for the right time, we proceed to the most interesting. Using a kitchen knife, remove the mesh, cut the ham into thin slices.
