How to make hedgehogs with gravy? First of all, to prepare meat hedgehogs, prepare minced meat from any kind of meat or take a ready-made one.

Boil rice in plenty of water until ready. Then put it in a colander and pour cold water over it so that it cools down faster.

Peel the onion and rinse in cold water. Pass 1 onion through a meat grinder or try to chop it very finely with a knife.

Combine minced meat, boiled rice and chopped onion in a large bowl. Add salt and spices to taste. You can add a little ground pepper. Mix the whole mass well until smooth, so that all the ingredients are evenly distributed with each other.

Form small balls from the resulting minced meat and roll them in flour.

Heat the frying pan to a hot state and pour a little vegetable oil.
Lay out the meat balls and fry them on all sides until golden brown. Then finely chop the second onion and add it to the meat balls in the pan. Fry everything together for a couple of minutes.

Separately mix sour cream with tomato paste. Add some water to them. Stir and pour the sauce into the pan. Bring everything to a boil, cover and cook over medium heat for 10-15 minutes. 5-7 minutes after the start of extinguishing, open the lid and turn the hedgehogs over with a knife or fork so that they are soaked from all sides.

You can serve such hedgehogs as an independent dish. And you can add a side dish of mashed potatoes, rice or spaghetti. Which, when served, can be poured with the sauce obtained during stewing.

Sour cream and tomato sauce is one of the most delicious and easiest to prepare. But it can always be supplemented or diversified with something. Try, when stewing, add a little mustard or soy sauce and as a result you will get an equally delicious dish with new flavors.

And to make the sauce a little thicker, add a little flour diluted in water when stewing.
