    Two types of tartare are prepared separately: the ingredients are mixed in different containers. Chop the black grenadier fillet finely with a knife (do not use a meat grinder, the mass will give a lot of excessive moisture). Chop vegetables and canned capers.

    Carefully place both types on a plate in the shape of the Yin-Yang symbol. Serve white or black bread with the dish.

Black Grenadier is a rare and valuable Far Eastern deep-sea fish. It lives in the northern seas of the Pacific Ocean at a depth of more than 2,000 meters and belongs to the order cod.

Black Grenadier refers to low-calorie foods: 100 grams of fish contains 70 kCal and less than 1% fat. At the same time, one serving (250 g) of this fish satisfies the daily need of the human body for polyunsaturated fatty acids. The proteins of black grenadier meat are close to the reference protein in terms of the content of essential amino acids, which means that such a protein is absorbed as well as possible.

There are no harmful impurities and parasites in grenadier meat, which are considered a "sore spot" of some pelagic fish. Thanks to this, it can be consumed even in absolutely raw form, which makes this fish ideal for our tartare! Without heat treatment, you will feel all the benefits of black grenadier and its sea taste.

In stores, the black grenadier is often found under the name "makrurus", as well as the small-eyed makrurus. At the same time, they differ greatly: the small—eyed macrurus contains even fewer calories, its meat is watery, and the grenadier's is dense, but juicy, with a sweet taste. They are preparing, of course. also in different ways. Externally, they can be distinguished by their skin: in the small—eyed macrurus, it is white in a mesh, in the grenadier it is dark gray, hard, and each individual scale resembles a small shell.
