Onion-mushroom soup in a slow cooker

It takes a long time to cook, but it's delicious. A few calories. Very tasty with breadcrumbs from black bread.

    I peel the mushrooms from the skin, I lie in small pieces.

    Cutting into pieces. I put mushrooms, carrots and onions in a slow cooker, pour water, turn on the "Cooking" mode for 30 minutes.

    While the mushroom broth is being prepared, I peel the bulk of the onion.

    Cut into medium cubes.

    Grate cheese on a fine grater. I'm waiting for the broth to be ready

    When the broth is ready, I begin to caramelize the onion. It's a long process. I cook for about 50 minutes, the "Frying" mode, the temperature is 130 degrees. Stir constantly. 5 minutes before the end, add a tablespoon of flour, mix thoroughly.

    Using a blender, I turn the broth with mushrooms into mashed potatoes. Pour into a slow cooker, add salt, pepper, cheese, herbs if desired. I turn on the "Soup" mode for 12 minutes.

    The soup is ready. Light and delicious. Especially with crackers made of black bread.
