    Sift flour with soda and pour parts into the dough. Knead a soft, slightly sticky dough. At first, you can knead with a whisk, and then with your hands. The dough turns out to be very tender, pliable.

    Depending on the size of the egg, humidity and fat content of sour cream, flour may need more or less. But it is better not to clog the dough with additional flour - the airiness of the finished products will disappear. Knead the dough until it begins to lag behind the walls of the bowl. I didn't need to add any extra flour at all. It is better to let the dough remain slightly sticky, then when rolling it out it can be corrected.

    Assemble the dough into a ball, cover with a towel and leave to rest for 30 minutes.

    Divide the dough into 10-12 identical pieces. I got 930 g of dough, so I divided it into 10 pieces of 93 g each. I baked in a frying pan with a bottom diameter of 20 cm, if you have a frying pan with a smaller diameter, then the pieces should be smaller, and their number, respectively, is greater.

    Fry the tortillas in a preheated frying pan (I have mode 7 of 9) in vegetable oil on both sides until golden brown. They fry very quickly, literally for 30-40 seconds on each side. Even faster than pancakes. In the process, they increase in volume, acquire airiness.

    You can fry in a dry frying pan without oil, but such cakes practically do not rise, there are no air bubbles, they are more dense. Try both options to choose which one you like best. I liked it with butter. Put the finished tortillas on top of each other and serve to the table. Bon appetit!

You can check whether the oil has warmed up well enough in a frying pan in a simple way. Lower a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
