How to fry cutlets in Donbass?

1. Cut the butter into oblong cubes, send it to the freezer for 20 minutes.

2. Minced meat should be as homogeneous as possible, so pass it through a meat grinder a couple of times, add salt, pepper, add a pinch of ground nutmeg, mix well.

3. Divide the minced meat into equal parts, put a piece of butter in the center of each part, form an oblong patty.

4. Break the eggs into a bowl, using a whisk, beat them until smooth.

5. Breaded each cutlet in breadcrumbs, then in egg batter and again in breadcrumbs.

6. Place the blanks on a cutting board and refrigerate for half an hour.

7. Pour vegetable oil into a deep thick-walled container and send it to the fire. When the oil is heated to about 180 degrees, spread the cutlets in batches and fry until a beautiful blush.

8. Put the finished cutlets on a paper towel to remove excess oil.

Serve on the table with any side dish as desired.
