Everyone who cares about their health and tries to stick to a balanced diet will like this cod recipe.

First of all, we will deal with fish. It's good if you managed to buy a fillet, but a whole carcass is quite suitable. Defrost the cod (or any other white fish), thoroughly rinse and cut into fillets with skin without bones. Dry the fish layers with a paper towel and cut into arbitrary pieces.

Sprinkle the fillet with salt and black pepper, also do not forget to add dried thyme and, if desired, any other spices that diversify the taste and aroma. We leave it to marinate, but for now we will do the passer.

Peel the onion, wash it, dry it, cut it into small cubes and pass it in a frying pan on hot olive oil. Fry the onion for 5 minutes until transparent.

Pour the fish to the onion and fry the cod on both sides for 2 minutes, stirring occasionally.

We prepare tomato pesto, for which dried (pickled) tomatoes with vegetable oil are crushed in a blender. You can also use ready-made pesto from dried tomatoes, which is sold in retail outlets.

Ready-made pesto (homemade or store-bought) is mixed with sour cream, ground pepper and Provencal herbs and this sauce is poured over the fish. Simmer for 4-5 minutes. It is important not to overdo it, because tender fish fillets are very sensitive to prolonged heating. We risk spoiling the dish and getting a rubber fish.

You can serve such a delicacy by decorating with parsley leaves and rosemary sprigs as an independent dish, and supporters of gluten-free and keto diets can try the option with cauliflower and broccoli puree. Also, any raw and boiled vegetables are perfect for a side dish.
