Step-by-step cooking

Cooking time: 1 h 20 min
  1. Step 1:

    Step 1.

How to make a kebab in the oven on skewers? Prepare all the necessary ingredients. If you buy ready-made minced meat, like me, take high-quality without additives. But it's better to do it yourself. You can use any herbs and spices that are available or that you like better in combination with meat. I took parsley and hops-suneli. Wine can be replaced with cherry or grape juice.

  2. Step 2:

    Step 2.

For cooking in the oven, you will need skewers and a heat-resistant mold. Pick up the form in advance, checking that you can put skewers with minced meat on it as in the photo of step 7. Take skewers with a length of at least 20 cm. If they are very thin (2-3 mm in diameter), you can take several pieces for one kebab cradle. This way the meat will hold on more firmly. To prevent them from burning when baking, fill them with cold water and leave for about an hour.

  3. Step 3:

    Step 3.

Transfer the minced meat to a deep bowl, in which it will be convenient to mix the minced meat with the rest of the ingredients. Peel the onion and garlic and rinse. Remove the tough stems and flaccid leaves from the greens, rinse and dry. Chop the onion, garlic and herbs with a knife. Add onion, garlic, herbs, salt, spices and soy sauce to the minced meat.

  4. Step 4:

    Step 4.

Knead the minced meat thoroughly until smooth. It is more convenient to do it with your hands.

  5. Step 5:

    Step 5.

So that the minced meat becomes more homogeneous, elastic and does not fall apart during cooking, beat it off. To do this, transfer it to the work surface, lift it about 20 cm above the table in your hands and throw it back with force. If the stuffing sticks, the surface can be slightly moistened with water. It took me about 20 throws. Then put the minced meat in the refrigerator for 30-50 minutes to cool.

  6. Step 6:

    Step 6.

After cooling, the minced meat will become more dense and it will be more convenient to work with it. Remove the skewers from the water. Divide the minced meat into 6 equal parts and form a kebab. To do this, take the skewers and wrap the minced meat around them, gently pressing it with the palm of your hand.

  7. Step 7:

    Step 7.

Pour the wine and water into a heat-resistant mold. Put the kebab cradle on it so that there is a small distance between them. Bake on the middle shelf of a preheated 200 degree oven for about 15 minutes. Then turn the skewers to the other side and leave for another 15 minutes. Determine the exact time and temperature by your oven.

Serve lula kebab hot with vegetable salad, bread, tortillas, boiled potatoes and various sauces.

In the process of cooking, several kebabs did not stay on the skewers and the minced meat sagged a little. So that you don't make my mistakes and so that the kebab cradle doesn't fall apart on the skewers, it's better to make the stuffing yourself and leave a not too thick layer on the skewers - or take longer skewers or make a larger amount of kebab cradle.

When adding soy sauce to a dish, it is worth considering that it has a rather salty taste. Reduce the total amount of salt, otherwise you risk over-salting.

Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use the useful information about the features of ovens !

So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
