    Prepare the specified baking ingredients. Nowhere is it specified what temperature the baking products should be, but I previously took eggs and milk out of the refrigerator in half an hour. I took eggs C1, milk 3.2% fat content. Wheat flour is the highest grade, I took spoons of flour with a small pea. Baking powder is 10 grams, this is a small standard package. The lemon will require juice and zest from one half, half a medium-sized lemon or one small one.

    Turn on the oven to preheat 180 degrees. In a deep bowl, break the washed chicken eggs, add a pinch of salt and sugar. Beat the mass with a mixer or whisk to lighten the mass.

    Wash the lemon and wipe it with a towel. Using a fine grater, remove the zest from the lemon and squeeze the juice from half of the fruit. Add milk, vegetable oil, zest and lemon juice to the bowl with eggs. Stir until the ingredients are combined.

    Add the pre-sifted flour with baking powder to the dough and mix with a whisk until the ingredients are combined. Bubbles will appear on the surface of the dough from the reaction of lemon with baking powder. The consistency of the dough turns out to be homogeneous, flowing in a dense mass from a spoon, similar to thick dough for pancakes.

    Prepare a pie baking dish, I took a 20 x 20 cm ceramic mold. Lubricate the mold with vegetable oil on all sides and sprinkle with flour, shake off the remnants. Pour the dough into the mold and put it in the preheated oven for 30-35 minutes, check the readiness with a wooden skewer - it should come out dry from the middle of the pie.

    Remove the finished pie from the oven and let it cool in the mold. Then cut it into portions and serve it with a glass of milk, a cup of tea, coffee. When serving the cake, it can be sprinkled with powdered sugar.

This recipe is a godsend! Under such simple conditions of preparation of ingredients for baking, when scales are not needed (sometimes they are simply unavailable), such an airy light cake turns out. It looks like the most delicate sponge cake with lemon flavor. Definitely, I will bake such a pie often. Also, I think such a pie can be cooked in a slow cooker.
