Yeast roll with raisins Grandma's Napkin

A unique pie with an amazing flavor! This roll can be made with any filling. In the step-by-step photos I did with cinnamon, and in the main photo I have a roll with steamed raisins and ground walnuts.

Heat milk to warm, dissolve sugar and salt in it.
Add eggs and beat with a fork.
Add the sifted flour, pour the yeast on top.
Mix yeast well with flour and then knead the dough.
Add lemon zest. Mix well.
Knead the melted butter into the dough.
If the dough sticks, then add a little more flour.
The dough should lag behind the hands and only stick a little.
Put the bowl with the dough in a warm place for an hour and a half.
When the dough is ready, put it on a starch-dusted table, roll it into a layer, grease it with melted butter, sprinkle with sugar mixed with cinnamon.
Roll up the roll, pinch the ends gently.
Use scissors to cut the roll around the circumference. Cut across, not reaching the edge.
The petals are obtained, which need to be laid as follows: two petals are slightly pulled out and laid sideways from the bottom, the third petal is also pulled out, but raised up.
And so walk around the entire circumference of the roll.
The upper petals in the center can be connected.
Leave for proofing in a warm place, smear with beaten egg on top. Sprinkle the roll with raisins.
Bake the roll for 25-30 minutes at a temperature of 180 degrees.
