    Prepare the specified products. Beef liver is best taken fresh, with a pleasant smell and even color, without bruising. Sour cream is suitable for any fat content, I take 15%. To the spices to your taste, you can add sweet peas, bay leaf. Prepare a frying pan and a small saucepan. You will also need half a cup of boiled water.

    Rinse beef liver well under running cold water. Remove all the films from it. It is also necessary, if possible, to cut off all the veins - large and small. Cut the prepared liver into small cubes, about 1 by 4 centimeters.

    Put the frying pan on the fire, heat it up and pour some vegetable oil. Put the prepared beef liver in a frying pan and fry it for about five minutes.

    Peel the onion and cut it into half rings (or arbitrarily). Add the chopped onion to the liver and fry it all together over low heat for 5-10 minutes, you can cover it with a lid.

    In a saucepan, dilute half a cup of water and flour, stirring constantly so that there are no lumps. Put the prepared mixture on a slow fire, heat, stirring constantly, until boiling, add sour cream, mix everything well and bring to a boil, not forgetting to stir constantly so that nothing burns.

    Add the prepared sour cream sauce to the liver, stir, add salt, ground black pepper, other spices to taste, cover with a lid and simmer for about 15 minutes.

    Ready-made beef stroganoff from the liver to serve hot. Boiled rice, mashed potatoes or pasta are suitable for garnish. Put the hot side dish, pieces of liver on a plate and pour the sauce over everything.

My family was divided equally into lovers and non-lovers of liver. Those who do not like it, do not even tolerate its smell, but we, the admirers of this offal, love the taste and aroma of the finished dish in it. However, because of this family disharmony, I don't cook it often. But since I cook, I cook delicious, and most often that's how it is - beef stroganoff in sour cream sauce.
