This recipe is interesting because it reveals and describes in detail an interesting way of cooking meat. It is called the reverse roasting method, and it consists in the fact that the meat is first slowly cooked at a low temperature, and then at the end it is fried over high heat. This allows you to get the perfect piece of meat - fried and juicy inside, and an appetizing crust on the outside.

Turn on the oven to warm up to 135 degrees Celsius, and at this time we do not sit idly by - we continue cooking. I wash the brisket under running water, and then dry it well with thick paper napkins - the meat does not need excess moisture.

Next, the prepared meat is seasoned on both sides with salt, ground black pepper and spices suitable for meat. It is better to grind black pepper immediately before adding it to the meat, thereby providing a stunning flavor to the beef brisket. Spices can be taken any, for example, a mix of different ground peppers is good. You can use ready-made spice mixes for meat dishes. So, we rub the meat from all sides, rub the seasonings into the meat.

Lubricate the baking tray or baking dish with a small amount of oil. We spread the brisket on top and send it to the oven that has managed to warm up to the desired temperature. We cook the meat until its internal temperature is equal to 50 degrees Celsius. We use a special thermometer for this purpose. The meat should be almost completely cooked.

Next, turn off the oven and leave the meat in it for 10 minutes. At this time, heat a frying pan with the remaining oil over high heat. When the oil is hot, put the meat in a frying pan and fry it for 1 minute, then turn the meat over and fry for another 1 minute on the other side. A delicious appetizing crust should appear on the meat.

We serve the meat on the table hot. We complement the brisket with our favorite sauces, fresh herbs, and, if desired, a hearty side dish. Various drinks, such as red wine, are well suited to such meat. You can also serve brisket with beer.
