Tomato bolognese sauce

Beef is passed through a meat grinder to obtain minced meat. Cut the bacon into small cubes.

Grate carrots, peel onions and finely chop. Tomatoes are scalded with boiling water, peel, finely chop.

Fry the bacon pieces in a frying pan in order to melt the fat. Remove the pork rinds, and fry the onion in the melted fat until slightly golden brown.

Add pre-chopped celery and grated carrots to the onion, fry for 5 minutes, then add minced meat to the vegetables.

Fry all the ingredients for another 7-8 minutes, add finely chopped garlic, black pepper, nutmeg and salt, and pour in dry wines.

Simmer the bolognese for 15 minutes under the lid, then pour in finely chopped parsley, put the tomato pulp and broth (water), mix and simmer on low heat.

The sauce should not boil - it should languish. And the longer, the better. Do not forget to stir and, if necessary, top up the meat broth (water).

Half an hour before cooking, we introduce milk into the bolognese (you can also add dry herbs if desired).
